Aktuelle Zahlen zur konventionellen und ökologischen Schweinehaltung in Deutschland.
Die Schweinefleisch-Produktion stellt einen bedeutenden Wirtschaftsfaktor in Deutschland dar. Die Zahlen bewegen sich in vielfacher Millionenhöhe. Bei der Größenordnung ist es schwer, sich zu vergegenwärtigen, dass hinter jeder Nummer ein individuelles Schwein steht. Ein Individuum mit einem eigenen Leben, einem inhärenten Wert und einer eigener Geschichte.
Die Daten stellen gleichwohl eine wichtige Grundlage für die Debatte rund um die Massentierhaltung dar. Sie helfen, ein besseres Verständnis für das Ausmaß der Tierproduktion in Deutschland zu bekommen. Die Zahlen machen die Dimension der Ausbeutung von Schweinen in der Landwirtschaft sichtbar.
Über die Jahre vollzog sich ein Strukturwandel in der Schweinehaltung hin zu immer größeren Betrieben. Die gewerbliche Schweinehaltung ist überwiegend in Betrieben mit mehreren Tausend Tieren üblich. Dort werden die Tiere größtenteils auf Spaltenböden gehalten. Die ökologische Schweinehaltung mit etwas höheren Haltungsanforderungen ist mit 0,8 Prozent verschwindend gering.
Knapp 48 Millionen Schweine wurden im Jahr 2022 in deutschen Schlachthöfen getötet. Die Zahl der Schweineschlachtungen sinkt seit einigen Jahren.
Die Schweineproduktion in Deutschland ist eng mit der europäischen Schweine-Produktion verknüpft. Deutschland importierte 2022 fast 8 Millionen Ferkel und Jungschweine, vor allem aus Dänemark und den Niederlanden. Im gleichen Jahr exportierte Deutschland etwa 1.7 Millionen Schweine in andere EU-Länder, allen voran nach Ungarn.
Das Statistische Bundesamt erhob im November 2022 einen Schweinebestand in Höhe von insgesamt rund 21 Millionen Schweinen in Deutschland. Pro Jahr leben tatsächlich deutlich mehr Schweine in deutschen Ställen. "Mastschweine" werden beispielsweise nach etwa sechs Lebensmonaten geschlachtet. Sie verbringen aber nicht die gesamte Lebenszeit im Mastbetrieb, sondern werden vorher einige Wochen im Schweinezuchtbetrieb aufgezogen. Ein Mastbetrieb kann also mehrere Mastdurchgänge pro Jahr durchführen.
Die Erhebung des Schweinebestandes in einem Stichmonat bildet also nicht die gesamte Schweine-Population ab, die in einem Kalenderjahr in Deutschland lebt.

Bekannterweise werden insbesondere “Mastschweine” in Betrieben mit vielen tausend Tieren gehalten. Im Jahr 2022 lebten knapp 55 Prozent der gemästeten Schweine in Betrieben mit über 1.000 “Mastschweinen”. Laut den gesetzlichen Haltungsvorgaben müssen in den tierhaltenden Betriebe “für die Fütterung und Pflege der Tiere ausreichend viele Personen mit den hierfür erforderlichen Kenntnissen und Fähigkeiten vorhanden” sein. Aber es gibt keine Obergrenzen für die Anzahl der zu versorgenden Schweine je Person. Je größer die Tierzahl, desto schwieriger ist die individuelle Versorgung.

Auch in der Schweinezucht ist ebenfalls die Haltung von mehreren Tausend Tieren üblich. Circa 85 Prozent der sogenannten Zuchtsauen leben in Betrieben, die über 1.000 Tiere halten. Und obwohl nur etwa fünf Prozent der deutschen Betriebe mehr als 5.000 “Zuchtsauen” halten, leben dort etwa ein Drittel aller weiblichen “Zuchtschweine”. In großen Zuchtbetrieben ist es üblich, die Geburten künstlich einzuleiten. So ist der Arbeitsaufwand planbar und der Betrieb produziert Ferkel nach einem festen Zeitplan.

Der Großteil der Schweine in Deutschland, über 99 Prozent, wird in konventionellen Betrieben gehalten. Im Jahr 2020 wirtschafteten von insgesamt 31.852 Betriebe nur 1.566 Betriebe nach ökologischen Standards. Darin hielten sie 212.455 Schweine. Das bedeutet, dass im Jahr 2020 nur 0,8 Prozent der Schweine nach ökologischen Vorgaben gehalten wurden (4).

Die Landwirtschaftszählung von 2020 zeigte, dass die Haltung auf Spaltenboden immer noch zum Standard in Deutschland gehört. Knapp 96 Prozent der Prozent der Haltungsplätze sind mit Voll- oder Teilspaltenboden versehen. Der Vollspaltenboden ist mit 80 Prozent besonders weit verbreitet.
Zudem erhalten die wenigsten Schweine Zugang ins Freie: Von den insgesamt knapp 28 Millionen Haltungsplätzen verfügen nur 337.800 Haltungsplätze über einen Auslauf im Freien. Das entspricht gerade einmal 1,2 Prozent. Das Statistische Bundesamt gibt an, dass es 37,900 Haltungsplätze mit Zugang zu einem Auslauf für "Zuchtsauen" gibt. Es veröffentlicht nicht, wie viele "Mastschweine" Zugang ins Freie erhalten (5).
Deutschland betreibt regen Handel mit Schweinen. Im Jahr 2022 importierte Deutschland insgesamt etwas mehr als 9 Millionen Schweine. Deutschland importiert allein aus den Nachbarländern Dänemark und den Niederlanden zusammen 7.8 Millionen Ferkel und Jungschweine. Im gleichen Jahr exportierte Deutschland etwa 1.7 Millionen Schweine in andere EU-Länder (6).
Deutschland exportiert vor allem Schweine nach Ungarn, Österreich, Polen, Rumänien und Spanien. Die nachfolgende Tabelle zeigt die Verteilung der exportierten Tiere. Die langen Transportstrecken durch die Europäische Union sind für die Jungtiere besonders belastend.

Neben der Haltung und dem Transport von Schweinen gehört insbesondere die Schlachtung zu einem zentralen Bestandteil der Schweinefleisch-Produktion. Die Zahl der in Deutschland geschlachteten Schweine hat in den letzten Jahren abgenommen, liegt aber immer noch bei knapp 48 Millionen Tieren. Vor 10 Jahren wurden dagegen über 10 Millionen Schweine mehr geschlachtet (7).

Der Verbrauch und Verzehr von Schweinefleisch sanken in den letzten Jahren in Deutschland um jeweils etwa 10 kg pro Kopf. Der Verbrauch setzt sich zusammen aus dem Verbrauch für menschliche Nahrung, Tierfutter, aber auch der industriellen Verwertung und den Verlusten (einschließlich Knochen). Der menschlicher Verzehr wird anhand einer Schätzung des sogenannten Bundesmarktverbandes für Vieh und Fleisch berechnet. Der menschliche Verzehr entspricht dem Schlachtgewicht ohne Knochen, Futter, industrielle Verwertung und Verluste (8)
